Homemade Chicken & Mac
(w/broccoli for mama)


Are you ready for another super easy super quick weekday meal that is yummy for all? This is a favorite by all in our house minus the littlest little she doesn't like pasta unless its daddy's Alfredo...that's it. (I am not joking not even a simple pasta with butter) 


Okay enough going off track, this is super simple and it starts with my super delish super easy chicken that I have shared a bunch of times. Next you need a 16oz of elbow pasta, 1/2 cup milk, 1 stick of butter, garlic powder, onion powder and some pepper (of course I don't measure the spices sorry) and a bag of finely shredded cheddar (the key to this is that is finely shredded and NOT reduced fat don't make that same mistakes as I did).  Got all your ingredients now? Okay lets get started...

Get your big pot of water going, while its trying to boil start cooking up your chicken in a separate pan. Then, in a small sauce pan just prep your butter, milk and spices in a pan, you don't need to turn this on till your pasta is almost done. Take your 1/2 cup of milk and pour in small sauce pan …. cut up your butter into slice but leave 1 slice out to add to your pasta once its done cooking so the noodles don't stick together. Then, add your garlic powder and onion powder and sprinkle the top of your milk and butter till its is covered, you def want it to be flavorful. (this takes some taste testing to get right you can always add more at the end really if you need to) Finally just add a couple sprinkles of pepper you really don't need a lot of this. 

Once your pasta is a couple minutes till done turn on your butter and milk to medium stir this often while the butter is melting … you don't want this to boil so keep an eye on it. 

Once your pasta is done drain and put back in big pan add slab of butter you left aside and stir leave till cheese is done.  

Okay back to the cheese sauce.... as soon as the milk starts to bubble up pretty good add 1/2 your bag of cheese and stir baby stir! Then add the rest....You may need to add a little more milk  if its very thick so have that near by.... keep stirring this till its all melted together. POUR over your macaroni and stir stir stir..... 

So now here is some ways to eat it with your chicken. Vitto prefers to eat it separate. I eat it all mixed together with broccoli (ya know the kind in the bag you toss in the microwave) and to make it even yummier I add 1 tbsp of Ranch Dressing! Oh its so good. Now my husband loves when I make him little shake and bake chicken nuggets with the Extra Crispy Shake n Bake packet and he uses the crunchy pieces that cooked with the shake and bake on top of his Mac! 

No matter which way you prefer it, its delish and SOOOOO EASY!!! This is also a great reheat meal! The mac reheats amazingly well. I cover it with a wet paper towel and toss in the microwave for a minute or so. 


INGREDIENTS for Mac & Cheese:
16 oz Elbow Mac 
1/2 - 3/4 cup milk
Garlic Powder
Onion Powder
garlic salt
Pepper
1 Stick Butter
8oz FINELY shredded Cheddar Cheese
(I use the Hannaford brand or Aldi)
8oz finely shredded mexican blend cheese (not the seasoned kind)


INGREDIENTS for Super Easy Chicken:
chopped up chicken breast
garlic powder
onion powder
sea salt
cracked pepper
Olive Oil

Life with puppies and the lessons they teach us

Lets talk about our four legged friends...we have a lot of them, so we could talk for a long time! These puppies and not just ours, teach us so much about LIFE, don't they?!
