Butternut Squash Soup

Hello everyone!

As we head into the new year, which I personally can't wait to happen, we are always looking for new healthy recipes, right?! Well I hope to share a few of my favorites over the next couple of weeks for you. This first one I share is an absolute favorite of mine as well as some friends and family I share it with. I hope everyone is excited for this new year and ready to reach all those goals! We all need each other to help make those goals and dreams possible! So, LETS ALL build each other up and help one another. Share you favorites with me too. 

Butternut Squash Soup is one of my favorite recipes to make for lunches. My recipe doesn't make a ton but it is worth it. The recipe is very simple. 
Here is a tip though before you even get started if you buy the butternut squash whole put it in the microwave for 2-3 mins first, this will soften the squash enough for you to cut it in half and then peel it. So here goes....

BUTTERNUT SQUASH SOUP

Ingredients:

2 large butternut squashes peeled and diced
4 gala apples 
2 tbsp Coconut oil melted 
Cinnamon
32 oz Chicken Stock
Sea salt or Pink Himalayan salt
cracked pepper

Directions:

Preheat oven to 375 degrees
Peel and dice butternut squash into small chunks (quicker roasting time)
Peel and cut up apples 

Place both apples and squash into a 9x12 baking dish drizzle melted coconut oil over squash and apples. Toss.
Sprinkle with cinnamon all over, then same with salt and pepper

Put in oven and roast about 40 mins until squash is soft.  Once done, let cool just a bit then add to blender with chicken stock and blend all together.

If you would like a thinner soup add more stock. 

I love to have this soup itself or cook up an apple chicken sausage and have with it on the side.

Life with puppies and the lessons they teach us

Lets talk about our four legged friends...we have a lot of them, so we could talk for a long time! These puppies and not just ours, teach us so much about LIFE, don't they?! As much as they drive me crazy, I truly love them all.  Everyone who knows me, knows I was never an animal person until I met my husband and he had Moe aka Moe Moe. He was a beagle.
